Arnaud a commencé comme serveur au restaurant Menta e Rosmarino ensuite en tant qu’assistant manager chez Quick puis cuisinier en prison. Il ouvre L’atelier du goût, son propre restaurant et devient ensuite Chef de cuisine au restaurant Le Moment.
